Sweet Potato Pancakes

Some years ago, I found and lost a recipe for Sweet Potato Pancakes.  I remember I had first made these as a Super Football Sunday treat and served them with a hot salsa and sour cream.  These are great with eggs for breakfast and as I just learned they can be used as a tasty bottom to my No-Crust Quiche.

 

For every two sweet potato’s

One white potato

One egg

¼-cup grated onion

½- cup flour

Salt and Pepper to taste

Vegetable Oil

 

Grate the potato’s and onion add remaining ingredients.  Over medium heat warm vegetable oil in skillet, shape mixture with serving spoon sliding carefully into pan.  Brown both sides. Sprinkle with salt and pepper and serve.  Save leftover’s for Ali’s No-Crust Quiche.
